Recipe
A friend of mine on Etsy shared her amazing marinara sauce recipe and I thought I'd share it:
The Best Marinara Sauce on the Planet
2 lb. garden tomatoes, washed
1 6-oz. can Italian tomato paste
1 T. brown sugar
1 medium clove garlic, minced
1/2 t. kosher salt
1/4 t. freshly ground black pepper
1/8 t. red pepper flakes
1 T. extra virgin olive oil
4 oz. very finely chopped Vidalia onion
2 T. sweet white wine
1 T. minced fresh parsley
1 t. finely chopped fresh oregano
4 large (lettuce leaf) or 8 small leaves fresh basil, cut in chiffonade
Place tomatoes, tomato paste, brown sugar, minced garlic, salt, pepper and red pepper flakes in a food processor (preferably a Vita Mix); process 'til completely smooth (tomato seeds are totally liquified). Meanwhile, heat oil over medium low heat in large saucepan; add onion and saute 'til soft, about 10 min. Add tomato mixture and white wine; heat to boiling, reduce heat and simmer, stirring occasionally, for 1/2 hour. Add parsley, oregano and basil; stir and ENJOY!
(4 recipes yields 10 pints, if canning)
